Easy Oven Baked Frittata with cherry tomatoes, spinach and Greek yoghurt. An easy, gluten free recipe that’s perfect for meal prepping breakfast or lunches for the whole family.

EASY OVEN BAKED FRITTATA
I usually live off a diet of children’s leftovers and find I tend to end up eating terribly, things like toast crusts and leftover pasta. So I am attempting to meal prep four days of lunches and dinners for myself. I have no problem eating the same thing for 4 days, then changing, which makes it super easy. This week I am having this frittata for lunch and butter chicken with cauliflower rice for dinner.
This frittata comes together in just a couple of steps. The first time I made it I whisked the eggs and then combined everything in one bowl, then poured into the dish to bake. I found though that everything floated to the top when it cooked. If you layer it in the dish with a bit of cheese on top, the mixture seemed to mix through the frittata a bit more. You could top with more cheese if you like a crispy cheesy top.
EASY OVEN BAKED FRITTATA INGREDIENTS

- EGGS – I usually try to use pasture raised eggs, but any eggs you have will be fine.
- GREEK YOGHURT – make sure you use greek yoghurt or natural yoghurt, you don’t want to use any yoghurts that are sweet or flavoured.
- BUTTER – any butter you have at home will work.
- SPINACH – always adding some vegetables or greens to my cooking where I can.
- BASIL – for flavour, goes wells with eggs.
- TOMATOES – cherry or grape tomatoes are best.
- CHEESE – mozzarella or cheddar are both fine. If you don’t have either of these you can use whatever grated cheese you usually use.

Can I use other vegetables in this frittata?
Yes, there are many other vegetables you can use in frittata such as mushrooms, capsicum, zucchini and pumpkin just to name a few.
Can I add any extra protein to this frittata?
If you wanted to add extra protein you could use shredded or diced chicken, ham, cooked bacon, chorizo, salami or sausage. Keep in mind if you are adding extra vegetables and proteins the cooking times might vary.
How long will this frittata last for?
If kept in the fridge, this frittata would be best eaten within 3 days.
HOW TO MAKE EASY OVEN BAKED FRITTATA


STEP 1
In a large bowl whisk together the eggs and yoghurt.
STEP 2
Layer ingredients into greased dish & top with egg.
Bake in the oven for 30-35 minutes until firm in the centre.
Easy Oven Baked Frittata
- Yield: 4–6 serves 1x
Ingredients
- 12 eggs
- ½ cup Greek yoghurt
- 1 tablespoon butter
- 1 cup baby spinach leaves, roughly chopped
- ½ cup fresh basil, roughly chopped
- 350g cherry tomatoes, cut in half
- ½ cup / 100g grated cheese, mozzarella or cheddar both work well
- salt & pepper
Instructions
Pre heat oven to 200°C.
In a large bowl whisk together the eggs and yoghurt.
Grease a baking dish with butter then layer in the spinach, basil, some of the tomatoes and cheese. Pour over the egg mixture, top with remaining tomatoes and season with salt and pepper.
Bake in the oven for 30-35 minutes until firm in the centre.
Allow to cool in baking dish, then tip out onto a board and cut into servings.
Notes
You can freeze frittata, but this version has a lot of moisture with all the tomatoes, so I wouldn’t recommend it. Store in an airtight container in the fridge for 3-4 days.
