Cauliflower and Corn Mac and Cheese
This recipe came about kinda accidentally while I was recipe testing Cauliflower Fritters. I had cauliflower left over and lost track of time, so quickly whipped this up for dinner. It was so easy and ready in less than 30 minutes and great for leftovers the following night. My kids had their favourite dinner of hotdogs with a side of this, so easy!
Step 1
Cook pasta in boiling water for 8 minutes, then add in the cauliflower and cook it all for a further 2 minutes. Drain and add to casserole dish along with the milk, cream, corn and cheese.
Step 2
Sprinkle with breadcrumbs and roughly chopped butter.
Step 3
Bake for 15-20 minutes until golden and crunchy.

Ingredients
- 250g macaroni
- 1/2 head cauliflower, cut into small pieces
- 11/4 cups / 310ml milk
- 1 cup / 250ml single (pouring) cream
- 3/4 cup corn kernels, frozen is fine
- 3 cups / 360g cheddar cheese, grated
- 1 cup / 130g parmesan cheese, finely grated
- salt & pepper
- 2 cups panko breadcrumbs
- 50g butter
Instructions
Preheat oven to 200ºC.
Cook the pasta in a large saucepan of salted boiling water for 8 minutes. Add the cauliflower and cook another 2 minutes.
Place the pasta and cauliflower into a large casserole dish and mix in the milk, cream, corn, cheeses, salt & pepper. Stir well to combine.
Top with breadcrumbs and roughly chopped butter dotted around the top. Bake for 15–20 minutes or until golden and crunchy.
Notes
You could also melt the butter and mix it with the breadcrumbs then sprinkle over the top, instead of my lazy version of just roughly chopping and dolloping over the top.
